Aquavit restaurant in New York City, salutes the classic furniture and interior designers of Scandinavia with a nod to the Danish Masters Arne Jacobsen, Poul Kjaerholm and Verner Panton. The restaurant is named for the popular neutral spirit Aquavit that is also served in the restaurant. The restaurant is launching its own white cranberry aquavit. A United States importer and distributor will make it available to the public and in restaurants, bars and liquor stores in the New York area. The menu at Aquavit features Lobster roll, served with pistachio and lemon yogurt, cucumber salad and homemade ginger ale, or a house made Gravlax served with fingerling potato salad, red beer sorbet and an espresso and mustard sauce. Other entrees include hot smoked Artic Char, served with saffron and vanilla flavored eggplant puree, Octopus salad and tomato broth. Desserts reflect the main courses, offering warm chocolate Ganache, served with red bell pepper raspberry sorbet and lemongrass yogurt. The Arctic Circle dessert is a goat cheese and lemongrass parfait and is served with blueberry sorbet and honey tuile. Aquavit combines the age-old culinary traditions of Sweden with the creations of young American chefs.
