Chef Charles three-bedroom 1927 adobe cottage has been his home for more than 15 years. But from the moment he bought it, he envisioned its transformation into a fine dining restaurant. Chef Charles retired as the Albuquerque Country Clubs executive chef in 2012 after 23 years experience. He was born in Morocco, spent much of his youth in Israel and later moved to the U.S., where he has worked for restaurants in Boston, New Hampshire, Palm Springs, Calif., and Albuquerque.
