One day in 1918, while making a sandwich, Philippe Mathieu, the founder of Philippe the Original, inadvertently dropped a sliced French roll into the roasting pan filled with juice still hot from the oven. The patron, a policeman, said he would take the sandwich anyway and returned the next day with some friends asking for more dipped sandwiches. As a result, the French-dipped sandwich was a creation established by Philippe the Original. Philippe prepares about 40 gallons of its own hot mustard twice weekly. Its menu consists of beef, ham, lamb and pork French-dipped sandwiches as well as a variety of other sandwiches, soups, salads, breakfast foods and desserts. Established in 1908, Philippe the Original is one of the oldest restaurants in Southern California.
