Our gourmet caramel is truly a showstopper. Made from scratch in small batches using only fresh ingredients, our caramel is soft and creamy, never hard or chewy like the hard cubed caramels you find in the grocery store. Every chocolate caramel Tortue (a chocolate caramel turtle candy, only with our own French twist) is hand-poured by our chocolate-makers onto a bed of fresh, crunchy pecans, and then either covered in chocolate or left alone to be a plain caramel Tortue, otherwise known as a naked turtle! Whether itÃ&fnof¢ââ&euro&scaron‰â&eurož¢s our chocolate caramel Tortues, chocolate-covered caramel candy patties, our salted caramel peanut pirogues, or the chocolate caramel fudge, the fact that we make every single drop by hand, from scratch, in small batches, never using artificial flavorings or shortcuts, takes each caramel candy we use it in to the next level.Â

Our mainÂspecialtyÂis ourÂpralines, and there is truly no other confection that says both Southern and New Orleans more than the classic pecan praline. Our original creamy pecan pralines are no stranger to acclaim, from winning the Atlanta Gourmet ShowÃ&fnof¢ââ&euro&scaron‰â&eurož¢s Best Candy award to being listed as the best in America by Bon AppÃ&fnofÆ&rsquoÃ&sbquo©tit magazine. Similar to candied pecans, only creamier, pecan pralines resemble a cookie, but are actually a crumbly candy patty we make from fresh cream, butter, sugar, and Louisana pecans. We do have candied pecans, which we call glazed pecans, or else the praline pecans, which are the pecan nut without the praline coating.Â
We are happy to do custom orders, and over the years have made manyÂcustom labels withÂpersonalized logos for clients.
